Lemon and Lime Posset
Lemon and Lime Posset (makes 4-5)
Ingredients;
● 450ml double cream
● 150g caster sugar
● 2 lemons (zested)
● 1 lime (zested)
● Juice of 1 lemon
● Juice of ½ lime

Method
1. First prep your lemons and lime by zesting and juicing as per ingredients.
2. Add the cream and sugar to a pan over a low heat and let the sugar dissolve into the cream.
3. Once dissolved, turn up the heat to medium and stir until the mixture is boiling. Once boiling, leave to bubble for about a minute.
4. Take off the heat and mix in your lemon and lime zest and juices, leaving behind some zest for decoration at the end.
5. Pour the mixture evenly into the Tala ramekins and sprinkle over the leftover zest.
6. Let the posset's set in the fridge for 4-5 hours. Then, scoop in and enjoy!
