Mince Pie Puff Pastry Squares

Ingredients
● 1 x sheet puff pastry
● 300g mincemeat
● 1 egg (for egg wash)
● 150ml double cream
● 2 tbsp icing sugar

Method
1. Preheat the oven to 200°C and line 2 baking trays with parchment paper.
2. Roll out the pastry onto a floured surface and cut into 12 equal pieces. Using a cookie cutter,gently press to form a light stencil in the middle of each piece (don’t press all the way through). Dollop on the mincemeat so it fits within the circle and brush the borders with egg wash.
3. Carefully transfer each piece to the baking trays, leaving an even space between each.
4. Bake in the preheated oven for 20-25 minutes until golden brown.
5. Whilst cooling, whisk together the double cream and icing sugar until soft peaks form. Then place into a piping bag with a star nozzle and pipe onto the mince pie squares.
Dust with extra icing sugar if you fancy!
