Pistachio Cream Puffs

Ingredients:
320g puff pastry
250g mascarpone cheese
240ml double cream
100g pistachio spread
3 tbsp icing sugar, plus extra for dusting
2 tbsp milk
Few drops green food colouring (optional)

Method:
- Preheat the oven to 200°C/180°C fan/gas mark 6.
- Roll out the pastry dough on a lightly floured surface. With a 9 cm round cookie cutter, cut out 10 disks.
- Fold each disk in half then transfer to a large baking tray lined with greaseproof baking paper.
- Brush with milk before baking for about 10 mins until puffed and golden.
- Transfer to a wire rack to cool down completely.
- Put the mascarpone, double cream, pistachio spread, green food colouring and icing sugar in a medium mixing bowl and whip with an electric whisk for a few mins.
- Transfer to a piping bag fitted with any nozzle of your choice.
- Split the pastries in half crossways and fill each with the pistachio cream.
- Dust with icing sugar.
- Serve and enjoy!
