Sheet Pan BBQ Chicken Nachos

Dusty Pink Stoneware Mixing Bowl
Ingredients:
200g tortilla chips
200g cooked shredded chicken
4tbsp bbq sauce
1tsp garlic powder
1/2 tsp paprika
1/8tsp black pepper
100g cheddar cheese, grated
100g Red Leicester cheese grated
1/2 red onion, finely chopped
1 large tomato chopped
Jalapeños, sliced
Parsley, finely chopped
Chive and sour dip, to serve
Method:
1. preheat the oven to 180/160 degrees Celsius fan/gas mark 4.
2. Add the chicken to a medium mixing bowl and combine with the BBQ sauce, garlic powder, paprika and black pepper. Set aside.
3. Arrange the tortilla chips on a 45cm x 30cm baking tray, lined with greaseproof baking paper. Add the chicken, cheese, red onion, tomato and jalapeños.
4. Bake for 10 mins
5. Sprinkle with fresh parsley.
6. Serve, while still warm, with chive and sour cream dip.
