Vanilla and Chocolate Madeleines

Ingredients:
125g plain flour, sifted
2 large eggs
75g caster sugar
1&½ teaspoon vanilla extract
100g unsalted butter, melted, plus extra for greasing
¾ teaspoon baking powder
Pinch of salt

80g milk chocolate
White chocolate sprinkles
Method:
- Mix the flour, salt and baking powder in a small bowl. Set aside.
- In a large mixing bowl whisk the eggs and sugar with an electric mixer until thick and fluffy.
- Beat in the vanilla until combined.
- Gently fold in the flour, salt and baking powder with the help of a spatula.
- Add the melted butter and mix until well combined.
- Cover the bowl with cling film and refrigerate for 40 mins.
- Brush the madeleine tray with butter. Add a generous tablespoon of batter into each well.
- Bake in a preheated oven to 180°C/160°C fan/gas mark 4 for 10 mins.
- Transfer to a wire rack to cool down.
- Melt the chocolate then dip one-third of each madeleine in it. Add some chocolate sprinkles then leave to dry.
