Baked Caprese Gnocchi

This Baked Caprese Gnocchi is a comforting Italian-inspired dish that combines pillowy soft gnocchi with the fresh and vibrant flavours of a classic Caprese salad. This one-pan meal features gnocchi baked in a rich tomato sauce with melted mozzarella, fragrant basil, and a hint of garlic, creating a perfect balance of savoury, cheesy, and herbaceous goodness.

As it bakes, the mozzarella turns irresistibly gooey, while the gnocchi absorbs the flavours of the sauce, making each bite warm and satisfying.

Bake time 20 mins
Serves 4

Ingredients:

500g gnocchi
2 cups chopped fresh tomatoes
2 mozzarella balls
3 tbsp extra virgin olive oil
2-3 garlic cloves, minced
Fresh basil leaves
Salt, to taste
Pepper, to taste

Method:

1. Preheat the oven to 220°C/200°C fan/gas mark 6.
2. Add the gnocchi, tomato, garlic, oil, salt and pepper to a large baking tray then toss everything together with the help of a spatula.
3. Break the mozzarella with your hands and scatter it around.
4. Add some basil leaves then bake for 15-20 mins.
5. Garnish with more fresh basil leaves.
6. Serve and enjoy!
