Ghost Truffles

Ingredients:
75g cocoa powder
220ml double cream
135ml vegetable oil
3 large eggs
150g caster sugar
250g plain flour
3 tbsp baking powder
200g mascarpone cheese
75g icing sugar
400g white chocolate
Black fondant
Method:
1. Preheat the oven to 180°C/160°C fan/gas mark 4.
2. In a large mixing bowl, sift together the flour, baking powder and cacao powder. Set aside.
3. In another bowl beat the sugar and oil then add the eggs, one at a time.
4. Add the double cream and mix well.
5. Fold in the dried ingredients and mix until combined.
6. Pour the mixture into a 23cm x 23cm square cake tin, previously greased with some butter.
7. Bake for 35-40 mins.
8. Transfer to a wire rack and leave to cool down completely.
9. Add the cake, cream cheese and icing sugar to the bowl of a stand mixer and combine until you get a smooth dough.
10. Scoop a heaped tablespoon of the mixture into your hands, then roll into balls. With the help of your fingertips shape the ball into a rounded tip cone.
11. Place the cake cones on a tray covered with greaseproof baking paper then transfer to the fridge for at least 4 hours.
12. Melt the chocolate then transfer to a large piping bag. Cut the tip off then pipe the chocolate all over the cones. Leave to dry.
13. Use some black fondant to make the mouth and the eyes of the ghosts.
