Tala Lemon Curd

Our Tala Lemon curd is a delightful spread or filling with a tangy, sweet flavor made from lemon juice, sugar, butter, and eggs. It has a smooth, creamy texture and a vibrant yellow color. Perfect as a topping for scones, toast, or pancakes, or as a filling for cakes, tarts, or pastries. Add a burst of citrusy goodness to any dish!

Prep time: 5 mins 

Cooking time: 10-15 mins 

Makes: 1 big jar

 

Ingredients:

4 unwaxed lemons, zest and juice

200g caster sugar 

120g unsalted butter, diced 

3 large eggs, well beaten 

 

Method:

  1. Place the sugar, butter, lemon zest and juice in a medium pan on a low heat. Stir with a spatula until the sugar has completely dissolved.
  2. Whisk the eggs then add them to the lemon mixture. Mix until all the ingredients are well combined then leave to cook for 10-15 mins, stirring from time to time until the mixture is thick enough to coat the back of a spoon.
  3. Remove from the heat and leave to cool down.
  4. Pour the curd into a sterilized jar and seal with a lid.
  5. Store in the fridge for up to 3 weeks.
  6. Enjoy!
