
Marry Me Chicken
Marry Me Chicken is a rich, creamy, and flavorful dish of tender, pan-seared chicken breasts simmered in a luscious sauce made with garlic, sun-dried tomatoes, Parmesan cheese, heavy cream, and herbs. Ingredients:
2 large chicken breasts
4 tbsp plain flour
3 tbsp sundried tomato oil
1 red onion, sliced
2 garlic cloves, minced
100g sundried tomatoes, chopped
1/2 teaspoon dried oregano
1/2 teaspoon sweet paprika
100ml double cream
150ml chicken stock
1 tbsp grated cheese, cheddar or parmesan
Few basil leaves
Salt, to taste
Pepper, to taste
Method:
1. Place the flour on a large plate and season with salt and pepper. Coat the chicken breasts in the flour.
2. Heat 2 tbsp of sundried tomato oil in a frying pan and brown the chicken for about 4 mins on each side. Set aside.
3. Add 1 tbsp of sundried tomato oil, the onion and the garlic to a medium frying pan. Cook over a medium heat for 3-4 mins. Add the sundried tomatoes, chicken breasts, stock, cream, paprika and oregano.
4. Cook on low heat for about 20 mins, turning the chicken halfway through.
5. Stir in the grated cheese and add some fresh basil, before serving.
