Pesto Tomatoes and Feta Orzo Pasta

Serves 4
Ingredients:
500g cherry tomatoes
3 shallots, sliced
2 garlic cloves, smashed
4 tbsp extra virgin olive oil
1 teaspoon dried oregano
Few basil leaves
3 tbsp pesto
1 block feta
Salt, to taste
Black pepper, to taste
300g orzo pasta

Method:
1. Preheat the oven to 220°C/200°C fan/gas mark 6.
2. In a large ovenproof dish, combine tomatoes, shallots, garlic, herbs and oil. Season with salt and pepper and toss.
2. Place the feta in the middle of the tray.
3. Bake for 30 mins.
4. Meanwhile, cook the pasta following the instructions on the packaging. Make sure to keep a few tbsp of pasta water after draining.
5. Mash the tomatoes and feta with a fork.
6. Add the cooked pasta and reserved pasta water to the tomatoes and feta sauce and toss together.
7. Top with pesto and a few basil leaves.
