Raspberry and Peanut Butter Bites

These raspberry and peanut butter bites are a delicious and healthy snack that combines the natural sweetness of raspberries with the rich, nutty flavor of peanut butter. They're perfect for a quick energy boost or a satisfying treat.

Prep time: 15 mins, plus freezing time

Makes: 12 

 

Ingredients:

300g fresh raspberries

2 tbsp chia seeds 

6 tbsp crunchy peanut butter

300g dark chocolate 

Equipment:

Tala Performance Large Brownie Pan 34 cm x 24 cm 

Method:

  1. Wash and drain the raspberries. Transfer the raspberries to a medium bowl and gently mash them with a fork.
  2. Add the chia seeds and mix until combined. Let stand for 5 mins to allow the chia seeds to thicken the raspberries.
  3. Spoon the raspberries into 12 onto a large baking tray covered with greaseproof baking paper. Freeze for at least 3 hours.
  4. Top each raspberry bite with ½ tbsp of peanut butter. Return to the freezer for another hour.
  5. Melt the chocolate then dip each bite into it.
  6. Enjoy!
