
Tala Salmon Bowl

Ingredients:
1 cup rice
3 salmon fillets
1/2 teaspoon chilli flakes
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
1-2 tbsp soy sauce
1 tbsp olive oil
1 tbsp honey
1/2 lemon, juiced
Salt and pepper, to taste
To finish:
Cucumber, sliced
Red cabbage, sliced
Avocado, sliced
Sugar snap peas, sliced
Sesame seeds
Mayo
Method:
1. Put a pot of salted water to the boil. Add the rice and cook for about 15 minutes then drain.
2. Remove the skin of the salmon fillets. Cut each fillets into 8 squares.
3. Add the salmon to a medium bowl. Add the chilli, ginger, garlic powder, soy sauce, oil, honey, lemon juice, salt and pepper. Mix with a spoon.
4. Place the marinaded salmon onto a 25 x 18cm baking tray then bake in a preheated oven to 200°C/180°C fan/gas mark 6 for 15 mins.
5. Assemble the dish. Divide the rice and the salmon between 2 plates. Add cucumber, red cabbage, avocado and sugar snap peas.
6. Drizzle some mayo over the top and garnish with some sesame seeds.
